Know what I like about cupcakes?
They are small and cute, they are quick and easy to make, you can eat them out of hand, and... hello... they're cake.
For these cupcakes, I combined two of my favorite ingredients: strawberries and buttermilk.
The cupcakes themselves are slightly tangy, thanks to the buttermilk, making them the ideal companion for the sweet, fluffy strawberry buttercream. Topped with a fresh strawberry, they are as lovely to look at as they are to eat.
- 1 c. all-purpose flour
- 1 c. cake flour
- 1 1/2 t. baking powder
- 1/2 t. baking soda
- 3/4 t. kosher salt
- 1 c. granulated sugar
- 1/2 c. unsalted butter. softened
- 2 lg. eggs + 1 lg. egg yolk
- 2 t. pure vanilla extract
- 1 c. buttermilk
Preheat oven to 350 degrees. Line 18 muffin cups with paper liners.
In a large bowl, whisk together both types of flour, baking powder, baking soda and salt. Set aside.
In the bowl of an electric stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy. Beat in eggs and egg yolk. Stir in vanilla. Scrape sides of bowl as needed to ensure that everything is thoroughly combined.
Add flour mixture and buttermilk alternately, beginning and ending with the flour. Mix on low speed until combined, scraping bowl as needed.
Spoon batter into lined muffin tins, filling each 2/3 full. Bake for 15-18 minutes, or until cupcakes test done. Cool in pans for five minutes before removing to a wire rack. Wait to frost cupcakes until they are completely cooled.
Strawberry Jam Buttercream
- 1/2 c. unsalted butter, softened
- 1/2 t. pure vanilla extract
- 1/4 c. + 2 T. seedless strawberry jam
- approx. 3 c. powdered sugar
- 18 sm. strawberries, washed and dried
In the bowl of an electric stand mixer fitted with the whisk attachment, beat butter until it is light and creamy. Mix in vanilla and jam and mix well on low speed.
Add powdered sugar 1/2 c. at a time, mixing well and scraping bowl after each addition.
Top each cupcake with a generous spoonful of frosting. Garnish with a fresh strawberry.
Makes 18 cupcakes.
